Vegan Matcha Macadamia Biscuits

Recipes with Matcha Oat Latte

Matcha simply makes everything better! And that's exactly why we've baked delicious matcha macadamia biscuits for you: Fluffy, delicious and perfect as a little work snack between meals. With our Matcha Power Latte Mix, you can make these vegan cookies in no time. You might want to make twice as many, because you won't be able to keep your hands off .

Ingredients:

  • 3 tbsp Matcha Power Latte Mix from Blue Farm
  • 180g flour
  • 1 tbsp chia seeds
  • 50 ML water
  • 1 tbsp coconut flakes
  • 1/2 tsp baking powder
  • 100g macadamia nuts
  • 100g sunflower margarine
  • 50g brown sugar
  • 50g light sugar
  • 1 sachet vanilla sugar
  • 3 tablespoons water

(Use a pinch of salt if you are using unsalted macadamia nuts).

Instructions:

  1. Mix the chia seeds with 50 ML water and leave to soak for half an hour.
  2. Preheat your oven to 175 degrees and line a baking tray with baking paper.
  3. Roughly chop the macadamia nuts into quarters or halves.
  4. Mix the margarine, chia seeds, matcha power latte, sugar and vanilla sugar and 3 tbsp water with a hand mixer.
  5. Mix the flour, baking powder and coconut flakes together and then mix with the wet matcha mixture using a hand mixer.
  6. Finally, fold the chopped macadamia nuts into the batter.
  7. Spread small balls of the dough on your baking tray and bake the biscuits in your oven for about 15 minutes.
  8. Ready!
