Vegan and gluten free coffee ground pancakes

Once you made your coffee, you might want to throw away your coffee grounds… but don’t! Make yourself some delicious pancakes. Here is the recipe.

Ingredients for 6 pancakes

  • 200 g oatmeal
  • 3 tablespoons Oat Base
  • 300 ml water
  • 34 g coffee grounds
  • 1 tablespoon baking powder

Preparation of the pancakes:

First, blend the rolled oats until it becomes a fine flour (you can also use oat flour directly).
Then mix all the ingredients together and gradually add the water. Whisk everything until you have an evenly mixed batter.
Then add half a teaspoon of coconut oil and one and a half tablespoons of batter to your pan. Once small bubbles form on the surface of the pancake, you can flip it.
Top the finished pancakes with your favourite fruit, some syrup or nut puree and enjoy - Bon appétit.
